"Jewish" Apple Cake


5 large apples, unpeeled
2 tsp cinnamon
2 cups of sugar
4 eggs
1 cup vegetable oil
1/2 cup orange juice
1 tsp vanilla
3 cups flour
3 tsp baking powder
1/2 tsp salt
Preheat oven to 350 degrees. Core and slice apples in eighths. Place in a large bowl and sprinkle with the cinnamon and 5 tabls of sugar. Beat eggs and gradually add the remaining sugar (1 2/3 cups), oil, orange juice, and vanilla. Sift together flour, baking powder and salt. Combine with the egg mixture. Add the apples to this mixture and stir well. Grease a tube pan really well. Pour in the batter distributing it evenly in the pan. Bake for aprox 1 1/2 hours until the top is golden brown, test with a toothpick and be sure it comes out clean. Let the cake sit for a few minutes then unmold.
